BLACK BEAN DIP
I love black beans, and I also love bean dip! I came up with this quick and simple recipe last spring when I was hungry and looking for something to munch that would provide a healthy portion of protein instead of empty calories. I was also trying to figure out a sauce for a vegan mexican pizza I was planning to make for Cinco De Mayo. This worked out perfectly as the sauce... I'll be posting my pizza recipe soon! But for now… try out this tasty, quick, and super easy black bean dip recipe. All you need is the 5 ingredients pictured below (not including the bananas in the background...) and a food processor. I love this dip paired with organic blue or white corn tortilla chips!
Toss all ingredients into your food processor and process until the beans break down and you begin to get a creamy dip consistency. Stop the processor, scrape the sides with a spatula and taste test the dip. Add additional salt/pepper if needed and process for a few more seconds until you reach your desired consistency. Enjoy!
Tip: For a thicker bean dip, be sure to let your beans drain completely after rinsing them in water. Very wet beans will result in a thinner dip. You can also process for a shorter amount of time for a chunkier dip.
